Is consumption high in ultra-processed foods associated with increased mortality risk  ? It is in this regard that French researchers were interested in a study published on February 11, 2019 in the journal Jama internal Medicine. The results showed a link between ultra-processed food consumption and the risk of premature death.

A 15% increase in mortality

45,000 French people over 45, mostly women, participated in the study for 8 years, from 2009 to 2017. Every six months, they had to record on an online questionnaire all they had eaten and drunk for three 24-hour periods. By the end of seven years, about 600 study participants had died. The researchers looked at their data and found that a 10% increase in the proportion of ultra-processed food in the diet was a 15% increase in mortality.

However, Mathilde Touvier, a researcher at the National Institute of Health and Medical Research (Inserm), told the daily newspaper Le Dauphine Libere  "that we should not focus on the figure, what matters is the existence of a statistically significant link, and the study must be interpreted in a set of works ". The "observational" studies are the only solution in this particular research framework for ethical reasons; we can not do an experiment where we would eat these foods to one part of the population but not to another.

The reason: additives?

Among the hypotheses listed by the researchers, the additives present in these foods could be the cause . Their effects are studied in the laboratory, on cells and on rats, in particular in a laboratory of the national institute of agricultural research, informs Le Dauphine Libere. However, further studies are needed to confirm these findings and to unravel the various mechanisms by which ultra-processed foods can affect health.

Ultra-processed foods, what is it?

Unlike poorly processed natural foods that have just been dried or pasteurized, etc. to better preserve them without the addition of substances, ultra-processed foods are food products and beverages that contain many food additives  to increase their shelf life and make them easy to use . Comes from the food industry, they are snacks, chocolate bars, breakfast cereals, industrial pizzas, industrial nuggets, chips, cakes and sandwich breads and other bakery productsin which added gluten, emulsifiers, hydrogenated vegetable fats, etc. Several scientific studies have shown that people who consume the most ultra-processed foods have a  higher risk of overweight, obesity and diabetes. Reducing their consumption to one product per day is a good way to protect yourself from such diseases.

Warning: a prepared dish, without additives, frozen or not, is not part of it. But ready meals, sodas and snacks in general are part of it.
